Baked Berry & YoPro Loaf

Ingredients

Wet Ingredients
  • 160g YoPro yoghurt (vanilla) (P + C)
  • ¾ cup skim milk (P + C + F)
  • 2 eggs (P)
  • 1 cup frozen raspberries (C)
  • 1 tsp vanilla essence (Free)
Dry Ingredients
  • 1 cup oat bran (C)
  • 1/3 cup whole meal self-raising flour (C)
  • 1/2 cup vanilla plant-based protein powder (P)
  • 9 walnuts, chopped (F)
  • 2 tsp cinnamon (Free)
  • 1/4 cup xylitol/stevia (optional) (Free)

Directions

 
  1. Pre-heat oven to 170 degrees Celsius
  2. Line a 9 x 5 loaf tin with baking paper
  3. In a large mixing bowl, combine all the dry ingredients.
  4. In a separate small mixing bowl, combine all the wet ingredients.
  5. Pour the wet ingredients into the large mixing bowl with the dry ingredients and stir gently to just combine.
  6. Pour mixture into the baking tin and place in the oven.
  7. Allow to cook for 50-60 minutes or until browned on top and cooked all the way through (test by sticking a skewer or fork into the centre, and when it comes out clean, it should be cooked).
  8. Allow to cool slightly before serving.
  9. Slice loaf into 10 slices and store leftovers in the fridge in an airtight container.
Serving suggestion: Serve warm with 1 tbsp of Vanilla YoPro and enjoy!
