Quick and Easy Cauliflower Fried Rice

For 2 Blocks, divide into 4 serves For 4 Blocks, divide into 2 serves
Ingredients
6 cups cauliflower rice (C) 1Tbsp sesame oil (F) 1tsp olive oil (F) 1 garlic clove, diced (C) 240g raw chicken, thinly sliced (P) 1 ½ cups carrot grated (C) 1 ½ cups frozen peas (C) 2 eggs - whisked (P) 2 Tbsp Soy Sauce (Free) 1 tsp chilli flakes (optional) (Free) 2 spring onions (to garnish) (Free)
Directions
Heat sesame and olive oil on high in a large fry pan. Add garlic and cook for a couple of minutes, then add the chicken and cook for another 5 minutes
Add the cauliflower, carrots and peas and mix thoroughly
Add the whisked eggs to the side of the pan and once starting to set, scramble through the cauliflower rice
Add in the soy sauce and chilli flakes and mix well
Divide into serving bowls and garnish with spring onion to serve
