Quick and Easy Cauliflower Fried Rice

Ingredients

6 cups cauliflower rice (C) 1Tbsp sesame oil (F) 1tsp olive oil (F) 1 garlic clove, diced (C) 240g raw chicken, thinly sliced (P) 1 ½ cups carrot  grated (C) 1 ½ cups frozen peas (C) 2 eggs - whisked (P) 2 Tbsp Soy Sauce (Free) 1 tsp chilli flakes (optional) (Free) 2 spring onions (to garnish) (Free)

Directions

  • Heat sesame and olive oil on high in a large fry pan. Add garlic and cook for a couple of minutes, then add the chicken and cook for another 5 minutes
  • Add the cauliflower, carrots and peas and mix thoroughly
  • Add the whisked eggs to the side of the pan and once starting to set, scramble through the cauliflower rice
  • Add in the soy sauce and chilli flakes and mix well
  • Divide into serving bowls and garnish with spring onion to serve
